Yes it's called summer salad but this salad could be made anytime of the year.It's on the Menu... & It's still summer, I hope you have had a chance to do something fun before the end of it. If you're like me & haven't done anything to speak of we've got fall coming...


You will need:
Serves: 4
8 cups of mixed salad greens1 cup halved grape tomatoes1 cup thinly sliced seedless cucumber1 yellow bell pepper, sliced into 1/4-inch strips3/4 cup thinly sliced raddishes1/2 cup thinly sliced red onion1 recipe Balsamic Vinaigrette(recipe follows)In a large bowl, mix all of the vegetablesDrizzle with dressing just before serving.
Balsamic Vinaigrette
Makes about 1 1/2 cups1/2 cup aged balsamic vinegar2 T. firmly packed dark brown sugar2 T. stone-ground mustard1/2 tsp. garlic salt1/4 tsp. ground black pepper1/2 cup light Olive oilMix your ingredients in a small bowl, whisk in olive oil. Store in an air tight container in the refrigerator. May refrigerate up to two weeks.
