Bourbon Chicken

I saw this recipe and thought I would give it a try. I haven't tried very many Chinese dishes. This is a copycat recipe of Bourbon  Chicken from a Chinese restaurant but there is no bourbon in this dish. It is best served over white rice. I would make this again but for those of you who watch your sodium intake I would suggest using a lighter sodium  soy sauce in the sauce.


Ingredients:2 lbs. boneless chicken breasts, cut into bite size pieces1-2 T. olive oil1 garlic clove, crushed1/4 cup apple juice1/4 tsp. ginger3/4 tsp. crushed red pepper flakes ( optional)1/3 cup light brown sugar2 T. ketchup1 T. cider vinegar1/2 cup water1/3 cup soy sauce ( use a lighter sodium version)Directions:1. Heat oil in a large skillet2. Add Chicken pieces and cook until lightly browned3. Remove chicken4. Add remaining ingredients, heating over medium heat until well mixed and dissolved.5. Add chicken and bring to a hard boil.6. Reduce heat and simmer for 20-minutes.7. Serve  over hot rice.
